Warming up this dreary Monday!

I decided to set my intention today, instead of bitchy and tired, I’m focusing my energy on all that’s awesome! Gratitude comes when we least expect it sometimes! I feel so loved and blessed though, it’s difficult to snap out of the slump or a bad mood but when I take a second to look around me I remember and all the frustration or anxiety just kind of falls away! I have the most handsome and wonderful partner, children who drive me crazy but make me so happy, they fill my heart and our lives with complete joy, fur babies that, while a never ending job, bring so much love into this home, and a career I can’t stop thanking the universe for. We are lucky! So naturally I had to make soup. It’s cold and rainy here and the best way to warm up and make the house smell amazing is to make a pot of butternut squash soup and it’s so easy!
Ingredients:
Olive Oil
small onion diced
garlic
Diced butternut squash (I get mine pre cut to save on time, HT or Trader Joe’s)
2 carrots
honey (optional)
stock (veggie or chicken)

Add oil, onion and garlic to large stock pot and sautee til onions are clear, add squash, carrots and honey if you’re using it, Stir it all together really well and cook for about 5 min, then add the stock, turn it up to a boil and cover for 20 min. I puree mine after it’s cooled a bit and make a dubliner irish cheddar grilled cheese sammie to go with it, nom nom!!! Enjoy and stay warm and dry and remind yourself what you’re thankful for!
