Meal Planning Monday!!!

It’s no secret I love Trader Joe’s, healthy, cheap, and if you go at the right time (non peak hours) it’s a quick trip too! We have a family of 5 (seeing that on the screen almost gave me a panic attack!) So eating at home is a much more economical and healthy plan, but Jake and I both work and I’m super unorganized so it’s tough. Trying to make this a habit though! I spent about 30 minutes and $111 this morning, here’s the meal breakdown.

Coconut Chicken Curry! It’s in the crockpot right now! I dumped the entire contents of the red curry and coconut milk over three frozen chicken breasts, put that sucker on high and all I have to do is cook some rice, easy peezy!

Chili with Spaghetti Squash. Again, super easy! Slice the squash add olive oil and bake on 400 for about 30 minutes, check it occasionally as everyone’s oven is different! Heat the chili is a sauce pan in the meantime, once the squash is done, use a fork to scoop out “noodles”, pour chili on top, add cheese and sour cream if it pleases you and don’t forget the corn chips!

Eggplant and zucchini pasta! If you have left over squash from the chili use it or just boil pasta, heat the eggplant melange and top it over pasta! Takes 12 minutes tops!

Butternut Squash risotto with chicken! In love with this risotto, perfect for fall! Bake chicken on 350 for 30+ minutes, drizzle with olive oil, salt, pepper, and garlic then cover with tin foil and toss in oven, prepare risotto in skillet and you’re done! If I run out of chicken I have a pork loin in the freezer to use too!

Mushroom Risotto and chicken, just like above, bake chicken or you could stick it in the crock pot with some chicken stock!

Pasta with clams and a creamy butter sauce, this is Jake’s forte, boil some pasta, make a butter cream sauce in a skillet and toss in clams, heat through and add to pasta! Delicious!

Spaghetti! I have tons of sauce in the cupboard all the time! I start with garlic (chopped), olive oil, diced onion if I have it and toss in the chopped zucchini til soft, add the ground beef til cooked, then add the sauce. Boil pasta or use spaghetti squash!

Here’s breakfast stuff,

1.pumpkin bread and cream cheese

2. greek yogurt and granola

3. 2 sunny side up eggs, 1 avocado

4. banana, cocao, oat, nutella, flaxseed smoothie (lactation smoothie ; )

Girls lunch stuff and snacks, Jake’s mum brought us back tons of apples from the mountains so we slice them and add nutella to dip, I send then lots of snack plates because they don’t like sammies and they like to pick, Stella will eat that whole seaweed container in one sitting!

I take this whole trip as a victory, we’ll eat left overs and snack plates for lunch through the week and Use up stuff in the pantry! Love trying my hand at getting more organized ; )
