I have to admit it’s absolutely amazing having three girls, yes, it’s busy and slightly chaotic at times but oh so much fun! Dinner time is always crunch time though, whether you’re single or have 10 kids, it doesn’t matter. Getting healthy food that didn’t cost a fortune or require every pot you own is tough! I was able to get dinner on the table in under an hour, 3 pans to wash and my kids (YES! even Amelie!) ate it! Yes I want a medal, or at least a cookie! So here goes…. I hit up Trader Joe’s, my go to grocery store, and got sockeye salmon fillets from the frozen section, I usually go fresh but their selection didn’t look too appealing, frozen organic green beans and a bottle of Chilean Sauvignon blanc (hooray I can have wine again!!!!) I have a packaged pasta at home and while I hate processed food, you can win every fight. All in I spent less than $20 including the wine, I call that a win!
I lined a glass baking dish with tin foil and placed the thawed salmon fillets in it, drizzled some olive oil, himalayan pink sea salt, freshly ground pepper, fresh lemm\on and rosemary from the bush out front, covered it and it went in a 400 degree oven for about 15 minutes, it’s up to you how long you bake and depends on the thickness of your fillets and how raw you like it… Sauteed the green beans with olive oil and a dash of salt, then prepared the mac and cheese. All done ; )
